Winemaker's Notes


Vinification: Syrah grapes were handpicked and selectively harvested from vineyards in the Upper Galilee, and went through a 48 hours cold soak in the winery in order to extract the fruit flavors, color, and aromas before alcoholic fermentation began. 2/3 of Syrah grapes fermented on stems while the other part were fermented as whole clusters and some as separated stems alone before being reentered into the fermentation, giving the wine its elegant, fresh, and spicy character, all while maintaining its original fruit flavors and terroir expression. Fermentation took place in large, open vats in order to optimize the contact period with the grape skins. The entire contact and mixing process was performed by the traditional punch down and gravitation methods, without any use of pumps or other mechanisms. Following the 2 weeks of fermentation, the wine was then separated from the grape skins as “free run,” without press, in order

Products are packed with coolant during their journey to ensure they arrive in great shape. Meats will arrive frozen or refrigerated. Most of our products are shipped frozen; occasionally, due to a very quick turnaround between when the meats arrive at our freezing and distribution facility and when they are delivered to you, meats may be shipped fresh. Meat that is cold to the touch can be refrigerated for immediate use, or frozen for later use.
