We are constantly replenishing our inventory, and sometimes we will have to make a vintage substitution. We reserve the right to substitute the vintage of any bottle under $15 without notification. If a vintage substitution is needed for a wine over $15, we will send an email notification and wait 24 hours for your response before shipping the available vintage. If you are vintage specific please leave a note in the comment section at checkout. We will never substitute with a Shmita vintage. Thank you for your understanding.
Vinification: Grapes were handpicked and selectively harvested from vineyards in the Upper Galilee and Judean Mountains, each variety separately. Upon their arrival at the winery, the grapes went through a 72 hours cold soak process in order to extract the fruit flavors, color and aromas before alcoholic fermentation began. Part of the grapes fermented on stems while the other part were fermented as whole clusters and some with fruit stems, giving the wine its elegant, fresh, and spicy character, all while maintaining its original fruit flavors and terroir expression. Following the 2 weeks of fermentation for each grape variety, the wine was then separated from the grape skins as “free run,” without press, in order to avoid unwanted levels of bitterness, tannins and acidity. Products are packed with coolant during their journey to ensure they arrive in great shape. Meats will arrive frozen or refrigerated. Most of our products are shipped frozen; occasionally, due to a very quick turnaround between when the meats arrive at our freezing and distribution facility and when they are delivered to you, meats may be shipped fresh. Meat that is cold to the touch can be refrigerated for immediate use, or frozen for later use.
