Winemaker's Notes

The Herzog winery created their own cult California Cabernet with their Warnecke Vineyard Chalk Hill Cabernet Sauvignon. The wines have a classic Herzog label, and while they can be consumed within a year or two of their vintage, they age gracefully. The Herzog Special Edition Chalk Hill Cabernet Sauvignon 1997 is in perfect drinking form now. This wine is well integrated with notes of leather and tobacco on the nose leading to hints of red fuit and cherry. On the palate some dark fruit, blackberry, blueberry followed by herbs and earthy notes. With over 20 years of age this wine has held its structure and balance over time, developing wonderous tertiary aromas of figs, wet leaves and a really enjoyable savory character.
