Sourced from the Mata Vineyard in the heart of the Judean Hills, Flam Classico is a tantalizing Bordeaux-style red blend of 61% Cabernet Sauvignon, 12% Merlot, 16% Cabernet Franc, 7% Petit Verdot, 4% Syrah that is aged ten months in oak barrels. The appearance is a cloudy garnet that lightens at the rim. Big fruity aromas pop out from this wine with lots of blueberries, raspberries, and more red and black fruit. The smells are fresh without any jamminess. Lighter aromatic tones of oak and vanilla can also be detected. The wine is medium-bodied and maintains strong acids but light tannins. The taste is filled with lots of fruit flavors and a little bit of spice to give it a peppery finish. It is drinking well now but will continue to age for 2-5 years. Pair with roast Cornish Hen or mushroom gnocchi.
