Winemaker's Notes
Produced from grapes located in the hills of Mount Meron at 700 meters high, the single vineyard Dalton Cabernet Sauvignon Zivon was crafted from well balanced organic vines, producing tasteful grapes that make the wine truly special. Fermented in stainless steel tanks and aged for 18 months in French oak barrels, the wine features a dark purple color and is highly aromatic. On the nose, look for subtle green notes of herbs and spices and a palate that is dominated by ripe black cherries and licorice, with a long and elegant finish. This full-bodied wine is built to age and will improve over the next 10+ years.
