Parmesan, Cheddar, & Brie: Your Shavuot Guide to Pairing Wine & Cheese

Who doesn't love some good wine & cheese?
Many of us look forward to enjoying a cup of wine at Friday night dinner. We have our chicken or meat dish, and we pair it with our favorite big, bold, red wine. We enjoy the sensation of the fruitiness of the wine blending with the savory nature of the food, creating a wonderfully memorable experience for our taste buds. However, unless we partake in more weekly drinking and pairing, (why not!) we often forget to take advantage of how wonderfully wine and cheese pairings complement each other, and create a beautiful tasting experience.
A good wine and cheese pairing goes together like peanut butter and jelly, or chicken soup and matzah balls. As we approach Shavuot, the holiday where dairy reigns, it's the perfect time to reacquaint ourselves with pairing wine and cheese.
Here are five popular cheeses and the recommended wines to pair with them:

Parmesan Cheese
Tabor Adama Rose: This dry, crisp Rosé from the Galilee has a red, fruity aroma that mingles with the saltiness of parmesan to create a refreshing balance of flavors.
Sharp Cheddar Cheese
Elvi Herenza Rioja: This wine, comprised exclusively of Tempranillo grapes, comes from the Rioja region in Spain. It is aged in both French and American oak barrels for five months. It is best paired with hard cheeses like a Fontina or a brick cheddar.

Romano Cheese
Tulip Merlot: Blend the smooth, redcurrant and mocha flavors of this Israeli Merlot with the sharp saltiness of this Italian Romano cheese. This pairing is so mouthwatering, you could easliy imagine yourself overlooking the waves on the coast of the Mediterranean!
Goat Cheese
Flam Blanc: The smooth quality and subtle calm flavor of goat cheese is drawn out by the acidity and punch of the citrus flavor in the Flam Blanc.

Brie
Hagafen Lake County White Riesling: This light-bodied Riesling is bursting with fruity flavors ranging from mango and pineapple, to peach. The wine has a balanced acidity, and a long finish. It pairs beautifully with soft cheeses like Mozzarella, Camembert, and Brie.
